If sinx+cosx=u,   u2=1+2sinxcosx2u2
y=1+u+u212=u2+2u+12=(u+1)22

(1+sinx)(1+cosx)(1++sinx+1+cosx2)2(2+(1+1)(sin2x+cos2x)2)2=(1+12)2
The equality occurs for x=45, which says that we got a maximal value. As you said, the minimal value is 0 and since our expression is continuous, we got a range, which you wrote. The inequality sinx+cosx2 we can prove by using AM-GM:
sinx+cosx|sinx|+|cosx|=1+2|sinx||cosx|1+|sinx|2+|cosx|2=2
